Chilli salt is one of my favourite ways to take food from bland to bang. A pinch as a finishing salt, a sprinkle over chips or a serious kick added to your cooking. This batch, however, isn't messing about.

Made using Brain Strain Yellow, one of the most notorious super-hot chilli varieties around. Originally selected from the Trinidad 7 Pot for its extraordinary brain-like, deeply wrinkled appearance, this yellow version packs all the same attitude into vivid golden pods.

But there's more to it than just ridiculous heat. Crack open a ripe pod and you'll find an unexpected hit of pineapple and tropical fruit, with sweet, floral and slightly smoky notes hiding behind the fire.

Estimated to be comfortably into seven-figure Scoville territory, Brain Strain Yellow delivers serious heat with a surprisingly fruity character.

Combined with coarse Pink Himalayan Salt, it's a punchy finishing salt for anyone who likes their food with a little (or a lot of) danger.

Try it on: Chips, eggs, grilled meats, roasted vegetables, pizza or anything that needs a tropical kick and a serious wake-up call.
