Aged Goblin Blood Hot Sauce

 

After the huge success of my Goblin Blood hot sauce, which sold out faster than any special I’ve done to date, I’ve decided to step things up and dig out a couple of aged ferments to share with you.

I’ve ended up with a Jalapeño ketchup style sauce. Once again I kept things super simple on this sauce to showcase the glory of the fermented green chillies. NO GARLIC!!! I know, unheard of right?! Just a touch of vinegar and round off the funky mixed ferment of 18 month Black Jalapeños combined with 12 month fermented Aci Sivri and Bullet chillies.

 

This sauce is incredible on top of lasagne or drenching a pizza but to be fair I’ve been hammering it over every meal and even added it to soups to give a fresh green tang. I’d also recommend this in a cheeky Bloody Mary!
